I once knew someone who was allergic to bananas. Okay, I say “knew” very loosely – I knew someone who knew of them. A friend of mine worked in a building where Banana-Allergic girl worked. It was kind of crazy. There were NO BANANA signs everywhere. It was pretty intense. Apparently they had a couple of banana lock downs, I kid you not.
I am not allergic to bananas and I have no great passion for them either way. I do know a couple of intense banana haters and lovers, but they’re kind of take or leave it for me. However, when you toss them in a buttery, brown sugar sauce and throw them on top of french toast, I’m totally in. French toast makes anything instantly desirable.
Guys, as I was writing this post I realized I have an obsession with French toast. Okay, I know I say that I’m obsessed with a lot of things, but I think my French toast obsession is a real one. I looked through my archives and found 8 French toast recipes so I went ahead and made a French toast category. Because, French toast. Caramelized Banana French Toast Recipe
serves 2French Toast
- 2 eggs
- 1/3 cup milk
- 1 teaspoon cinnamon
- 4 thick slices of day old bread (french or challah work well)
- butter or oil
Caramelized Bananas
- 1 firm banana, sliced
- 1 tablespoon butter
- 1 tablespoon brown sugar
- 1/8 teaspoon cinnamon
- roughly chopped roasted hazelnuts, to garnish
Beat eggs, milk and cinnamon together in a shallow bowl. Dip slices of bread into egg mix allowing the bread to soak up eggy goodness. Melt a pat of butter in a large skillet over medium to medium-high heat. Add the soaked slices of bread and fry until golden brown on both sides, flipping once.
While your toast is getting golden, caramelize the bananas. Melt butter in a medium saucepan over medium heat. When the butter is melted, add the brown sugar and cinnamon and stir until the sugar dissolves. When the mixture is bubbling at the edges, add the bananas and stir to coat. Let bubble until caramel is thick and bubbly. Serve bananas on top of french toast. Sprinkle with roasted hazelnuts to finish. Enjoy!

I am a huge french toast eater too and I also am a huge banana person. Especially the caramelized variety!! So this is my kind of breakfast for sure!

I don’t have a french toast addiction but I do have a bit of waffle crush. As I don’t have a waffle maker (yet) its more a platonic faraway adoration but these things you put on top of a french toast I would spoon on top of waffles!

Caramelized bananas are delicious. You can give a bananas foster flavor with rum extract. I also like to stuff French Toast with bananas and cheesecake filling.
