Potato salad. Definitely the salad I make a beeline to at all picnics, barbecues and potlucks. Often I’m disappointed so, to negate that, I’m usually the one bringing potato salad to the party. This is a super quick, super easy fully loaded baked potato salad. I baked the potatoes to get that earthy flavour, but you can go ahead and boil them if that’s easier. Potatoes, bacon, cheddar and green onions. I could eat this all. the. time, especially alongside some barbecued jalapeño honey garlic chicken. Happy weekend friends!

Mix until combined, season with salt and pepper to taste and chill. Garnish with the reserved green onions, bacon and cheddar. Enjoy!

This looks too perfect! Potato and bacon are always a good idea if you ask me.

  6. I love making fusion recipes. ie – loaded baked potato into a salad. Another fun one is making a ham and brie sandwich into a pizza, and making your own honey mustard as a sauce.

  7. This sounds like it may be the perfect potato salad. I’m grilling in the park this weekend, and I think this might have to go on the menu.
