I Am... Oven-Roasted Rosemary Chicken Thighs, Sugar Snap Peas & Quinoa

Hey Guys! Sorry for the little break in posting – I spent the last couple of days running around NYC going to meetings and eating everything in sight. I had a great time but it feels SO good to be home. I'm going to put up a little recap soon, but in the meantime, here's the quick and easy dinner Mike and I will be eating tonight.

I Am... Tomato and Egg Breakfast Pizza Recipe

While I was living in Japan, I ate my fill of Japanese foods: ramen, soba, udon, katsu, yakitori, curry, tempura, sushi, takoyaki, okonomiyaki, anything remotely Japanese, I was all over it. But sometimes, out of nowhere, a pizza craving would hit and the call for that piping hot crispy combination of savory tomato sauce and gooey cheese could not be ignored. I tried to sate the beast with these little pizza kits that I found at our neighborhood supermarket. They had dough, sauce and some shredded cheese packaged neat and tidy into individualized compartments, and then in a larger more elaborate package. I had high hopes, really, I did, but after baking up and inhaling the little guys, I had to admit to myself, they just didn't hit the spot. I wanted a bubbly charred crisp crust, I wanted simple perfection, I wanted a Neapolitan style pizza.

I Am... Friday Finds: 4.24.15

Mike and I have been into omelettes as of late. One leisurely morning, I made a delicious French-inspired goat cheese one. I asked Mike if he wanted me to make him one too, but he declined. But, after I convinced him to take a bite of the deliciousness, he was inspired and made his own. I think it's amazing how many ways there are to cook a simple omelette. Every culture has it's own version and it would be amazing to make each and every one. It wouldn't be much of a stretch for me either – I absolutely love eggs.

I Am... Crispy Chicken Fried Steak Bites with White Wine Sausage Gravy

Warmer weather on the horizon means that Mike and I are planning on heading out to our patio more, which means drinks and nibbles as the nights start to get longer. I hardly ever (read: never) drink without having something to snack on and even though I'm not the biggest indulger, I absolutely love coming up with drink pairings. There's something so satisfying about figuring out what goes with what.

I Am... Blistered Shishito and Burrata Bread Salad

When you get home, what's the first thing you do? I have a little habit that Mike thinks is weird and a remnant of how my parents raised me. I like to think it's pretty normal and not crazy at all. But of course, now that I've said that it isn't crazy, you probably think it is. But it isn't crazy! At least I don't think so? Tell me it isn't crazy...

I Am... Friday Finds: 4.17.15

Don't you love getting things in the mail? I love receiving packages, but even more than that, I love handwritten mail. I remember having a pen pal in grade 2 – we wrote to each other about our days at school and sent each other scratch-and-sniff stickers. She was just the nicest girl (hi Danielle!) and I remember being so jealous of the fact that she was living on a farm and had her own chickens and a goat.

I Am... Goat Cheese Toasts with Balsamic and Roasted Tomatoes

It seems like every type of food is having a little moment to shine in the spotlight. Toast – it's a thing. Or is it? Is Toast's moment in the sun almost over? Are things like tater tots and cruffins taking over the spotlight? Regardless of its popularity (or lack thereof), Toast will always have a place in my heart.

I Am... How to make: Fruity Pebble Pancakes

Are you a pancake experimenter? Usually I keep my pancakes plain (aside from chocolate chips) and let the toppings be as wild as possible. I find that it's a good compromise if I'm making pancakes for a bunch of people – not everyone likes fruit or nuts. Even when making pancakes for myself, I'm not huge into putting things into the batter, but this week I decided to go a little crazy. I had a couple of leftover Fruity Pebble Meringues and the thought of crispy-crunchy meringues inside pancakes got me all excited so I rolled with it.

I Am... Friday Finds: 4.10.15

Mike and started the week with some takeout Chinese BBQ and I have a feeling that we're going to have some again this weekend as well. It's been a takeout kind of week. Not that we've actually eaten takeout at all (other than that one time), but this week has just been killer. I need some trashy food and weekend waffles, stat!

I Am... Sliders with Jalapeno Burger Sauce

I am loving Spring. The days are getting longer and it's finally starting to warm up. Mike and I sat on our deck yesterday and soaked up the sun. I even needed a hat – it was glorious. Now that warmer weather is approaching, my mind is starting to turn to all the delicious things we are going to eat outside.

I Am... Fruity Pebble Meringues

When I was little and the pickiest eater in all the land, one of the few things that my mom knew I would consistently eat was sugary cereal. You know how they say that you should let picky kids just starve until they'll eat whatever you put in front of them? Yeah, that didn't quite work for me. After multiple hunger strikes (we're talking all day affairs), my mom finally learned that if I didn't like it, I wasn't going to eat it. That meant that sometimes, when I wasn't eating plain rice, I would get to eat cereal for dinner.

I Am... Potato Slider Buns

Happy Easter Sunday guys! Hope everyone is having a fabulous one. We’re heading out for dim sum brunch with my family, but when we get home we’ll have these soft and fluffy potato buns waiting for us. Usually on Sunday I’ll share a brunch recipe, and technically I guess potato buns aren’t really a brunch food, but I hope you’ll forgive me because I couldn’t let Easter go by without making some sort of bun(ny)-type food. Plus, these buns can easily be brunch-ifed: just tuck in some soft scrambled eggs, crispy bacon, and cheese for a quick breakfast sandwich.
