I Am... Quick & Easy Chicken Dinner Pizza

We're taking a quick break from the camping, quite literally, right now. Both virtually with this chicken dinner pizza, and physically because we're at a Starbucks, enjoying some caffeine and free wifi. Mike's busy catching up on work that he's been desperately needing to do and I'm just catching up on the internets. I have a thing for fried noodles. They are and always will be one of my favorite things to eat. In fact, I kinda sort of dream about going to Japan in the summertime just so I can eat yakisoba at a summer festival. I mean, I've been to Japan and I've had yakisoba there, but not at a summer festival, which is supposed to be one of the ultimate Japanese experiences. Time is just flying by! We stopped by in Portland for a little break between campsites but now we're back at it. We had Pok Pok for the first time as well as another Thai fried chicken place and now I'm kind of obsessed with Thai sticky rice. I mean, sticky rice has always been one of my faves, but now I'm super obsessed. I think it partially has to do with the fact that it's Dragon Boat festival right now and I'm sad that I'm not at home to make sticky rice dumplings with my mom.

Guys, I've been having the BEST time camping. We've been going off the grid, sans internet and it has been wonderful. I never knew how addicted I was to my phone. Okay, who am I kidding, I definitely knew, and I needed an intervention. Camping along the Pacific Northwest coast has been the sweetest intervention ever. Early nights with daily fires, early mornings with camp pour over, and cooking outdoors equal dreams come true.

I talked about the big ticket camp items: tent, sleeping bag/pads, and coolers – now it's time to move on to the fun stuff! Part of the reason I love getting into new things is the discovery of so many specialized items. Do I want a folding camp cutting board with a hidden slot for a knife in it? Why yes, yes I do! It's not a great way to get into things because you'll rack up a huge bill in no time at all, but I figure, if we go camping a lot lot, we'll amortize the cost, right? Right! Right...I hope.

I Am... Camp Gear: Part 1

Mike and I are planning on doing a BUNCH of camping this season. The last time we went camping was in 2011 – damn that was a long time ago! It was a random trip, in April, in Yosemite. Highlighs included: wild flowers, snow on the ground, and a large bear trying to eat the food that another campsite didn't put in the bear lockers (PSA - put the food in the bear lockers!). It was a memorable trip and for the life of me I don't know why we haven't gotten our butts in gear to go again. Speaking of gear, this time we decided to do it right and research everything.

I Am... Beer Battered Onion Rings, Jalapeno Aioli

Are you guys Stanley Cup fans? I have vivid memories of me as a kid, staying up late, watching the playoffs. I didn't really understand the intricacies of the game – I still don't, but I did know that when the puck went into the net, it was time to cheer. The gameplay didn't matter to me so much, it was more the fact that my whole family hung out together, in the family room, glued to Hockey Night in Canada, united by our love for the game.
