I Am... Cheddar Cheese Broccoli Tots

So...broccoli was on sale at the store and because I have a wee bit of broccoli obsession, I bought a huge bunch. I'm talking like 8 heads of broccoli. Mike really likes broccoli too so it wasn't difficult for us to finish them off. I hear that broccoli isn't really a popular veggie – I'm guessing that some people think that it's boring, but I really love its crunch, its color, and the texture difference between the florets and the stems.

I Am... Friday Finds: 3.5.2014

I don't want to jinx it, but the weather has been absolutely gorgeous lately. A true spring with fresh, crisp, dewy mornings and afternoons that warm up just a bit. The sunshine feels so good and even thought it's not nearly warm enough – more like chilly with a lot of light, Mike and I have been hanging out on our little deck with a blankets and a portable heater. I'm excited for spring!

I Am... Mini Green Tea Chocolate No-Bake Ice Box Cake Recipe

  I had a lovely ladies lunch of pulled pork pizza with my dear friend Lyndsay yesterday. It was a gorgeously sunny day and afterwards we wandered over to a newly opened ice cream place for swirls of soft serve with cornflakes, matcha, red beans, and sweetened condensed milk for dessert. It was a really, really nice day for Vancouver, but it didn't last. While we were heading home we saw some crazy haze over the city. It didn't look right and we both thought it was a little intense.

I know I say a variation of this every month, but I cannot, cannot believe that it's March! Spring is on the horizon! I can smell it in the air – that little bit of earthiness and thaw combined with all fresh green shoots that are popping up everywhere. On the weekend Mike and I took a walk around a nearby lake and all of the trees had tiny verdant leaves coming in. There are cherry blossoms galore happening here too – it was the very epitome of spring.

So...it's Friday! This week past by in a flash. The other day Mike and I went grocery shopping super late (which is my absolute fave because hello discount bakery items and empty store). Afterwards I wanted to grab bubble tea but we got there just as the open sign flickered off. It was tragic, I tell you. I mean, I could have gone up to the door and asked if the girl cleaning up inside would take pity and make me a fresh mango with mango mochi and pearls, but I know how it feels when it's the end of shift and you just want to go home. So, no bubble tea for me. How do you guys like your eggs? When I was little I was a straight-up scrambled egg girl. And no soft slow scramble either – nope, I LOVED those rubbery scrambled eggs that they used to serve up in those styrofoam containers at McDonalds. That was a long time ago. Last night I dreamt I was friends with Taylor Swift and we were going on a road trip. We stopped into a roadside diner and were chatting when all of a sudden she got really paranoid and asked me to turn around and see if the people behind us were taking covert pictures of her. It was so REAL that when I woke up I was disappointed when I realized that it was all a dream. HA! Sometimes I dream so hard that the dreams (at least the feelings) blend into real life. Mike always tells me, "Remember, if you get mad in a dream, it doesn't mean it happened in real life." Cheers to the weekend and more dreaming!
