I Am... Spam Mac and Cheese Recipe

As a kid, I was the pickiest eater. My favourite meal was plain white rice, if even that. Mostly, my mom let me get away with eating bowls of Cocoa Pebbles for dinner. There were a couple of other things that I would deign to eat – one of them was spam. Or, rather, luncheon meat. We didn't actually eat spam brand spam. Instead my mom bought Chinese luncheon meat that came in a round can with an orange and blue wrapper. When I saw my mom whip out the can opener, I would get super excited because there would be something to eat with my rice.

I had the hardest time figuring out what his signature white belly would be made of, but when I came across half a wheel of brie in my cheese drawer (yes, I have a cheese drawer) it was like the Totoro stars aligned. Do you guys ever picture something coming out perfectly? Maybe this is a weird quirk of mine, but sometimes I'll day dream about dishes. I'll obsess over the ingredients, the way the finished product is going to look and how it's going to taste. Usually, when I do this, it ends in disaster. Once, I invited my in-laws over for pizza. This was when I just started cooking and I wasn't really too confident in the kitchen. I thought about the toppings, the dough, the logistics of baking off pizzas while they were over, how I set the table, everything.

I'm a huge fan of chicken wings and I don't really know anyone who isn't. I think eating wings satisfies some sort of primal urge we have to rip meat off bones. I truly believe eating wings brings people together. There's just no way to be civilized when eating wings. Well, I guess you could break out the knife and fork, but the truth is, if you're down with eating wings with someone, it means you're cool with being your real self.
